What’s on the Menu {5/19–5/23}

I was so tired this morning from my whirlwind weekend in NYC that I totally overslept and didn’t have a chance to finish our menu before rushing off to work. So, without further adieu, here’s what we’ll be having this week.

Weekly Dinner Menu

Monday—I made a variation of this Pierogies and Sheet Pan meal using spicy Italian Sausage and broccoli.

Tuesday—Over easy eggs with Spicy Potato Salad {I have some potatoes already made that I can cut and toss together with the other ingredients to make a quick meal.}

WednesdayHoisin Burgers with some cut veggies

Thursday—A small batch of this Cream of Mushroom Soup with Mozzarella Grilled Cheese Sandwiches

Friday—Leftover mushroom soup tossed with penne pasta and chicken.
